Take a screenshot every 10 minutes and save to a folder (macOS):

while [ 1 ];
do v=$(date +%Y\-%m\-%d\__%H-%M-%S); 
screencapture -x ~/Screenshots/$v.png; 
sleep 600; done

Resulting PNGs may be pretty big. Change to JPEG:

screencapture -t jpg -x ~/Screenshots/$v.jpg
